Newsie I love to take A whole eggplant, rub with some EXVOO, poke a gazillion holes in the sucker with a fork, pre-heat the over to 425, put the hummer in for 15-20 minutes(just till all the water is evaporated and before the bulb starts getting soft.) Let it cool. Slice about 1" thich and either put on the grill or brolier for 6-10 minutes per side. Cut a nice slab of low-moisture mozzy cheese, put under the broiler(flame) until the bugger melts, put some tuscany low-fat amrinara sauce ove the baby, heat until sizzling. A match made in heaven for ANY aged Cabby/Shiraz/Zinfandel/Merlot/ or name your poison red. Use this quite often. WW
