Well.. Wednesday in Reims I had a glass (or two) of Ruinart rose' brut with choucroute (sourkraut, sausages, potatoes, ham). You're hard pressed to find a wine sans bubbles there. The wine was a heavy rose' not entirely unlike a Tavel. That brings me to my second suggestion, Friday in Paris I again had choucroute (good comfort food in the snowy weather). This I paired with a cheap Tavel (the only rose' on the menu). I found that the acidy fruit of the wine against the acidy vinegars of the kraut wrestled but did not seriously hurt each other. I do not know of another wine that could get away with this. Don't try it with a soft, light Provencal rose' or a Billecart-Salmon. They would undoubtedly get hurt.
