I don't really care for sauerkraut so don't have a lot of experiencing pairing it with wine. It would probably go with a dark German beer such as Alt Dusseldorf (or maybe Guinness Stout) or with Gewurztraminer wine from Alsace. Pork hocks might go with Spatburgunder, the German wine from Pinot Noir grapes.
