Hi Honzell and welcome to the Wine Board. A lot depends on what the cannelloni is stuffed with, and what kind of sauce it is baked with. If it is a rich dish of meat stuffing and tomato based sauce, recommend a fuller, richer version of Sangiovese such as Rosso di Montalcino. Admittedly, based on my second sentance, this is just a shot in the dark.
