Need wine for food selection

You screwed up when you listed the menu, because we are a bunch of anal, food and wine fanatics (at least I am), and HOW the dish is prepared is as important as the basic dish ingredients.

Is the rice Wild Rice? Is the quail roasted? With a glaze? Is the asparagus plain, or with a tomato and balsalmic topping? Does the green beans have sliced almonds.... yak, yak, yak.
