At first we liked this wine and thought it was great for the price. But we started to get tired of its astringency, making it drink almost like a cheap Cava. We've now switched our house bubbly to Francois Montand NV brut, a Methode Traditionale from Jura. This one actually lives up to the claims made about the St Hillaire, that it could go head to head with a $30 Champagne. It costs about 2 or 4 bucks less than the St. Hillaire.
Interesting downsizing from Dom to Blanquet de Limoux. Couldn't find anything in between?
