We've been nipping at the stuff for several evenings as a dessert wine, sometimes stretching a single bottle out over 3-4 days, following a red of some sort with dinner. Have found that it's better on day #2 and better still on day #3. What's "better"? The lemony tang is mellowed out, leaving a cleaner, crisper fruit, with no damage to the spritziness, surprisingly enough. I'm to the point of preferring to open a bottle and immediately cover the open neck with Saran-wrap, putting it in the fridge and waiting until the next evening to enjoy. But Debra still likes the stuff, so must endure the twanging, cloying sweetness as soon as the cork pops, at least for one glass. Such sacrifices we make for marital bliss.....
