Congratulations! Are you asking for input on the wines to go with the appetizers? If so, an unoaked Sauvignon Blanc would pair nicely with several of the selections--the blue cheese, the shrimp, the spinach in the spanikopita (love those) or maybe an off-dry Riesling to go with the Turkish apricots and honeycomb Manchego (cheese with honey? or just appearance of a honeycomb?) Perhaps a St. Supery or Honig Sauvignon Blanc from California or a Nobilo from New Zealand or one from Sancerre, France. For a Riesling maybe a Piesporter Spatlese. For a red wine, maybe a Cote du Rhones or Beaujolais Villages would be vertsatile enough and good late summer fare.
