That's sound advice. I would only add a suggestion that the Rieslings should be from the Mosel-Sahr-Ruwer region of Germany, and should be served well-chilled. Mosels are delightful with ham, and are available in both dry and sweet styles. Ask your wine merchant for specific selections from his inventory; expect a dry Mosel to cost as little as $6-8 per bottle, but a sweet style to be at least double that. (The sweet ones don't pair nearly as well with ham as do the dry wines, in my opinion.) But decline all offers of Liebfraumilch, even if they're giving it away!
