Grill those portabello mushrooms in garlic butter and then let them share the plate with strips of roasted red pepper (to roast, split a pepper in half, clean it out and then put it skin side-up in electric broiler at 350 for half an hour, or until skin blisters for easy peeling).

Sprinkle the lot with ground black pepper to taste. You do not ever need meat again for that red wine.
