My dear, any good sparkling wine has a fine level of acidity; it's the way the stuff is made. But maybe you can try a Cava--Spanish sparkling wine that is not only usually good, but goodly priced too. You'll have no trouble finding Frexinet or Cordonieu, but you'll pay less with unknowns and you'll likely get more interesting Cava.
