Frankly, I think you should wait for a few years before popping this particular cork. That way your headcold won't be a problem either. Serious, I really think that a nice dessert wine like this one should be given some time. Expect some fierce acidity if you pop it anyway. In that case a dessert with citrus fruits might work.
