Probably a combination of the two: cheap wine is likely produced with low-quality grapes; then, to add insult to injury, the wines are manipulated with certain chemistry to make them palatable. Your headaches might be a reaction to a specific chemical or wood chip or mold--who knows?

The point is: you have a better shot at feeling good after 3 glasses of wine if the wine is unadulterated and of high quality.
