There are a few wineries in Thailand already although you probably know about them

Most appear to be white varietals though it looks like Siam also grows Syrah. One other consideration is that if you are growing wine for location consumption, the look to local demand requirements as well. Slightly sweet whites might do well to complement the food and it appears taht Siam also does a large business selling wine coolers which are great in the hot weather.
