I don't think there is an ideal wine match. I like Pinot Noir or Beaujolais with mild cheddar or Gouda, Edam, etc. Might try a Tempranillo or a Zinfandel or a Cote du Rhone. I'd be interested in the results.
One liquor store site recommends the following with cheddar: Rioja (Tempranillo), young Burgundy, Pinot Noir, Beaujolais, young Bordeaux and another site recommends Merlot.
