Wine cellar dilemma

I appreciate your response! I have read a few accounts as yours so I may have been overthinking the situation. I do think however my cork ceiling may be contributing to my problem so I've decided to take it out and replace it with ceramic tile which is a much cheaper proposition. Thanks again.
