If your wine closet is already partitioned and insulated, you might consider adding a cooling unit, to stabilize the temperature & humidity within the proper ranges. There are plenty available, at modest prices, from CoolSpace, Breezeair, etc. <BR>I wish my own cellar problems could be handled so simply. Our consultant says the old storm cellar is really not a viable candidate for service as a long-term storage facility; it would be very difficult to seal and control. He recommends free-standing units and/or a converted closet inside the house.<BR>I'm thinking a new house may be in order.
