In Barolo there's a fine wine museum.

In Barabaresco, there's a great visitor center that will set you up with a fellow who can give you a talk on Barbaresco's history.

While in Piemonte, try to visit Gattinara.

As for eating, I can't tell you where the places are located, so best I say nothing, except that there's a fantastic pizza restaurant nearby Barbaresco.
