Hi Miss-C, and welcome to the Wine Board. Chardonnay and sauvignon blanc are two of many white wines. Chardonnay is less acidic than SB and usually quite oaky. Cabernet sauvignon, merlot, and syrah/shiraz are all red wines. Cabernet and merlot go well with beef dishes, and shiraz/syrah (the same grape called differnet names) goes well with lamb and stews.

If your employer won't train you, you should get a good book to help you along. Recommend "101 Essential Tips Wine" by Tom Stevenson; "Wine For Dummies" by Mary Ewing-Mulligan and Ed McCarthy; and "Great Wine Made Simple" by Andrea Immer.

Miss-c, Check out Wineguruchgo's post, 10 posts down, on the below thread...tis a good, quick reference BUT follow up with your tasting the different wines so you can match your palate to the written descriptives.
