Just bought my first bottle of cream sherry and have a few questions...

1. How is it made?

2. How else, besides over vanilla ice cream, can you use it?

3. After opening, should it be refridgerated?

A. It is made like any other Sherry; it is first fermented and then fortified. It may be blended with others from the same or other vintages. On the continuum of light to medium to full Sherries, Cream is usually at the full or Oloroso level.

B. It is best drunk as a dessert wine rather than as an aperitif. For noontime quaffing, up to sitting down for dinner, prefer a Fino or light one.

C. Not only should it be refrigerated, but should be finished in a week to ten days.
