Hi Jammer, and welcome to the Wine Board. Sparkling wine needs to be chilled to 45 degrees F. White and rose' wines need to be chilled to 55 degrees F. Beaujolais and other light reds need to be chilled to 60 degrees F. Other reds need to served at 65 degrees F.

In a wine bucket, a vessel large enough to hold at least one bottle of wine completely, filled with ice and almost completely refilled with water, you can chill wine 10 degrees in ten minutes. A refrigerator set at 50 degrees F with do it at 10 degrees in 30 minutes.

You do need to know what temperature the wine was at in the first place. It is usually at the same temperature as the room it was in, so long as it has been there for awhile.

Greetings all. I disagree with chilling red wines. I personally prefer them at room temperature (room temperature being 70 - 72 degrees F) This is a matter of personal taste, and I would encourage you to try them at different temperatures to see which you prefer. There is no right or wrong answer. I have a friend who enjoys drinking white wine at room temperature (shudder).
