May not be the optimum pairing but my CB and I just finished a traditional boiled dinner wif alla' dem good white veggies (onions, potatoes, and cabbage) and my wine of cherce which I found delicious was a 97 Scherrer " Old & Mature " Zinfandel. Even handled the homemade horseradish sauce. WW

First I always brown my brisket before I braise it.

Second I usually use a Beaujolais to deglaze the dutch oven after browning and before braising.
