Help for wedding planning (Roberto especially)

OK everyone, I'm hoping you'll be able to help me out with something. I've been put in charge of choosing and buying the wine for my brother's wedding reception, which will be Sept. 7 in Los Angeles. There will be about 125 people; they want enough Champagne/sparkling wine for everyone to have one glass; and here is the meal menu:

hors d'oeuvres:
-Vegetable spring rolls with ginger dipping sauce
-Ahi Skewers with wasabi dipping sauce
-chicken/ and vegetable pot stickers
-grilled Japanese eggplant stuffed with spicy tofu, etc
-salmon tartare with wasabi caviar in cucumber cups

main course: choice of
-Citrus chicken skewers with black sesame seeds and zest
-Roasted sesame crusted salmon with Chinese black bean sauce
(vegetarian entree available upon request)
-Tofu skewers brushed with hoisin ginger sauce

accompanied by:
-Buckwheat Noodle "Soba" bar with assorted toppings
-Watercress and baby spinach salad with bermuda onion oranges and toasted almonds with citrus-ginger marinade
-Grilled asparagus with miso-sesame vinagrette

dessert:  wedding cake

I was thinking of providing one red and one white so that people can choose. That seems to point toward Pinot Noir for the red because of the salmon. And something citrus-y for the white, given the multiple courses with citrus flavor. Any thoughts or more specific suggestions? And how much should we get?

Roberto, I'm hoping we can buy the wine from you. My brother says they can come to Santa Monica to pick it up.
