Hey guys, I'm asked about certain types of Mexican cuisine. First one is enchiladas, second one is mole... Any suggestions?

I agree with Foodster, Dos Equis is hard to beat.... especially the amber version. For wine, I usually look for a Garnacha.

I would go with a Garnacha with the enchiladas, and a Zinfandel with the mole.

Taco downed with tequila sounds great!

Try pairing an Italian Sangiovese or a Zinfandel with the chili then down it with Cabernet Sauvignon. This is even more awesome.
