Outrageous Markups?

Why do restaurants feel okay about their ridiculous markups on wine? While this is certainly something that's been going on forever I posted this with the hopes that maybe some owner or wine steward out there could give a good explanation. I believe in caveat emptor and all that but most prices especially with the better wines are just absurd.
