Our garden is full of banana peppers. Some regular and some hot. We never thought we would get so many from a few plants. I eat some with a sandwich and dip them in mayonase.

What are some more uses?

We have alot of cucumbers also but have no problem polishing them off. And our tomato plants are hanging full but we have only picked a couple so far. They will probaly all start turning at the same time. Ohh! the problems of life [img]http://wines.com/ubb2/biggrin.gif[/img]

Very similar to a Cubanelle, or, since you're of Italian heritage, a Corno di Toro.

Put some up in jars for future use. Marvelous in salads, sandwiches, and omelettes. Us indians know what be good. WW

I agree with WW, great place to start. Pickle a few for later use. Great with grinders.

Saute some with onions, sausages and garlic. Season with salt and pepper. Serve over white rice or in a grinder.

Try stuffed. Several different ways. Sausage, bread crumbs, onions, garlic, parmesan cheese, mozarella. Bake at 350*. Serve with marinara sauce.

Also try stuffed with rice, onions, red peppers, garlic, hamburger or ground sausage. Whatever cheese you like.

I seem to remember my grandmother adding them to chicken caccitore(sp).

Almost forgot a great one. Cut the caps almost all the way off. Stuff with combo of italian cheeses- ricotta, mozzarella, parmesan, romano, asagio. (I like to add some garlic and herbs.) Batter fry them.

Italian version of jalepeno poppers!

Thanks for the responses. I will have to see about pickiling some. And stuffing them with cheese sounds good.
