So, I have two requests:
First, I'm wondering what people's favorite pairings are with a basic baked pasta dish made simply with herbed tomato sauce and ricotta cheese.
Secondly, I'm looking for suggestions as to what might pair well with a mango salsa that's got quite a kick to it.

For the first, I'd recommend a Chianti Classico Reserva. For the second - clueless, no help.
