Wine Shop Sales Figures??

Hello. I am currently writing a business plan in order to open up a small (350-500 sq. ft.) wine shop in Brooklyn, NY. I am currently writing the financial section of the plan that requires sales estimates and expected income, and I realize that I need help from more experienced people. I have the following questions:

*Does anyone have information on the average number of bottles a small store can sell in a month? (Even rough estimates will be very helpful)

*How much above cost can you make on the average bottle of wine?

*What percentage of people in urban areas, on average, purchase 1, 2, 3+ bottles of wine in a month?

Any information will be very much appreciated, including any advice current store owners may have.
