I'm looking for wine or wines to go with a few different foods. All along the same lines, but slightly different, so wasn't sure if people would recomend various pairings or not...
guacamole and black bean dip
corn bread stuffing with roasted red and poblano peppers and turkey in an adobo sauce

Two that we've enjoyed in the last few months have been the Bodegas Zabrin Old Vines Garnacha de Fuego ('06 for $7-$8) and the Vina Alarba Old Vines Grenache ('05 for $8-$9).... both from the Calatayud and purchased at World Market. Your foods would work well with either or both. Nice wines, we rely on them a lot (and now that we've introduced them to our Sunday night group, the local stocks sell out quickly).

I think a light to medium bodied zin would work for both...

a chianti would work with the above, too. i've found it goes surprisingly well with mexican cuisine.
