			<description><![CDATA[It seems everyone and their dog (and it's fleas) thinks they can start a brewery these days so I figured I'd toss the question out there to y'all for debate: How hard is it to start a brewery? I mean beer is just water, yeast, hops, and malt. Boil 'em together and let it sit around for weeks until it's beer. Bottle it, come up with some silly/cool name for it, put it on a truck and get it to market. Oh! And if you run a brewery from Quebec, don't forget to include some anti-religious sentiments when naming your beer (i.e. Genou de la face de Dieu Saison Epique)! Do I have the formula right yet? Many of you likely find the above statement a huge pile of oversimplified ignorance from a forum (and brewing) noob. Good. It is! <br />

Really I want to get us talking about the true talent of fusing brewing art and business. What considerations should be made before starting a brewery? What are the biggest hurdles to overcome in startup? Beyond startup? What are the legal considerations (i.e. do you need an inspected facility? Permits? Licenses? etc.?). Is NS close to market saturation for craft beer? Is Canada? Is there any money in it? Does success/failure strongly correlate with product quality or can any beer sell if it's well marketed? <br />

A relocated liquor store in the Bel Air area now offers tap growlers of craft beers. I have a 64oz. growler and have been picking up a different beer every weekend for a while now as they offer 12 different selections which are changed to a new selection upon sell out. This local brewery I'd not heard of and purchased a growler at $10.99 this past Friday and have one more glass left for today. A beautiful white head on this hoppy IPA with appropriate bitter to sweet notes with citrus and peel flavors and a touch of caramel. Very impressive!<br />

Your first experience with this IPA is the citrus bouquet from<br />
 its rocky white head. The initial taste is subdued but gradually<br />
 becomes intense without any harsh bitterness. The Heartier<br />
 the Better.<br />

Hops: Bravo, Chinook, Simcoe,Citra<br />
ABV: 7.25%<br />

			<description><![CDATA[Went here after a visit to Brewery Ommegang where we learned of the Cooperstown Beverage Trail. Ommegang was nice, but everything they had is commercially available. Anyway, picked up a copy of Quench - the official magazine of the CBT. Since Cooperstown Brewing was close by, we decided to go there next. It's not a large place and has been around for 19 years but apparently struggled after they strayed from their original start up phase. It was designed by Allan Pugsley using the Peter Austin Brick Kettle Brewing Process, the same as was created at Ringwood Brewery in England. So, using that process and Ringwood Brewery yeast exclusively, they produce 4 beers - a pale ale, a session ale, a porter and an IPA. We liked the Old Slugger Pale Ale the best. It's a wonderfully malty English style pale ale, and we bought a growler to take home with us. It's a good thing they returned to the Pugsley/Ringwood formula because I read some reviews after they changed away and they weren't nice. We'll be visiting the rest of the Beverage Trail today and tomorrow morning when we head home.]]></description>

We steamed them, heated up the rice from last week in the double boiler, and warmed up the leftover enchilada sauce.  Sides were shredded Manchego cheese and shredded lettuce again.  <br />

We washed it down with Trader Jose'  Premium Beer, Imported from Mexico.  This was one of three they sell with this one coming in between the dark and the light.  Yum!]]></description>
