2001 Salento, Flaio, Primitivo (IGT) (Approx $10 Blue Hill Wine Shop). A lovely wine made in the style of a claret type zinfandel. Yet, it still hangs on to a precious piece of Italian dirt. Clear, smooth, and not a trace of sediment common in wines from this region. Matched perfectly with chile dogs tonight. We have wonderful franks up here called Jordon's Natural Casing Beef Franks. We mate them up in our slit top rolls (all the better to hold lobster and other shellfish salad) with Shelton's Chicken Chile With Black Beans (made with free range chicken) from California. Sort or combining the ying and the yang of things. Such a beautiful world.
