Barnesy - Innkeeper - 10-27-2000 The Joseph Drouhin, LaForet, Pinot Noir that we've been touting lately would match nicely and is widely available. - mrdutton - 10-27-2000 Any Beaujolais, cabernet franc, pinot noir or Cotes-de-Rhone would go nicely with the brie. Of if you wish to be a bit more traditional, get a sparkling wine or a white burgundy to go with your brie - Cote d'Or. I love brie. I had some the other day that was encroute (sp?). We baked it at 400 degrees for about 20 minutes. It had a bit of mango marmelade on top of the cheese under the pastry. Barnesy - Garbo - 11-09-2000 Another baked brie recipe: Apricot jam, thinly sliced caramelized onions, & chopped toasted hazelnuts layered in the center & on top of wheel of brie sliced horozontally, then wrapped in phyllo dough or crust of your choice.
