- Thomas - 11-08-2003 IK, remember that blueberry beer you sent me? I have used it a couple times for the Sunday breakfast batter but last night I was inspired by events to put the beer to another use. I had driven 300 miles from NYC to my upstate home, was tired and also found that I had no thawed stock for my dinner of thick-cut pork chops. So I improvised. For the sauce to pour over my chop I sauteed some shallots and garlic in olive oil (a fine oil I bought while in Provence). I deglazed the pan with Madeira and then cooked down a mixture of soy sauce and blueberry beer with a touch of flour for thickening. I poured the sauce over a lightly floured and grilled pork chop, and served with potatoes sliced thin and fried crispy in olive oil--delightful! Oh, almost forgot: joined it with a 2002 Franzen Dry Elbling, a particularly hard-to-find German wine variety.
