Gawd!...its been a while since I've had something like this and it was a good wakeup call. I suspect that this bottle is still a bit closed down as the fruit has not come all back but the structure is all there. Dark garnet still opaque with NO aging rim whatsoever. Stoney, flinty, tannic with some hints of green olives and a nice gameyness. Deep dark fruits in the background right now though. Lots of oak too...perhaps a bit too much for my liking....I'll leave half to air out for tomorrow night and I will report back. I may just have to leave this thing alone for a bit longer.....

Here is an entry from our wine history file: 1981 Paul Jaboulet Aine, “La Chapelle”, Hermitage. Drank 3/11/01. Wonderful.
