Not exactly the best known fish: skate. Sauted, oil or butter, garlic, shallots, lemon juice with a few veggies and potatoes.
If anyone could suggest an suitable pairing, I would appreciate it. Thanks.

I've heard it is a tender and tasty fish, similar to scallops. I would suggest a nice crisp Pinot Grigio.
