any ideas on a really tasty meatless entree that would work really well with a bottle of '95 phelps insignia? i would typically have a filet or n.y. strip with this myself, but not this time.

Newsie I love to take A whole eggplant, rub with some EXVOO, poke a gazillion holes in the sucker with a fork, pre-heat the over to 425, put the hummer in for 15-20 minutes(just till all the water is evaporated and before the bulb starts getting soft.) Let it cool. Slice about 1" thich and either put on the grill or brolier for 6-10 minutes per side. Cut a nice slab of low-moisture mozzy cheese, put under the broiler(flame) until the bugger melts, put some tuscany low-fat amrinara sauce ove the baby, heat until sizzling. A match made in heaven for ANY aged Cabby/Shiraz/Zinfandel/Merlot/ or name your poison red. Use this quite often. WW

Portobello mushrooms? Recipe is up to you, but they're very meatlike.

I think both grilled eggplant and/or grilled portobello would do well with most Cabernet Sauvignon-based wines, if that is what Insignia is these days.

I agree with Kcwhippet; Cook the portobella like you would a steak. Serve it exactly like you would a steak and present it like you would a steak. Can't go wrong. By the way, the '95 is nearing its end, so if you have more than one bottle, open them all.

Brappy I disagree on your assessment of the 95 Insignia. Under good cellaring conditions this wine has just hit its' peak. Think I've posted on it several times over the past few years. I still have over a box left and intend to drink over the next 6-10. WW

I stand corrected.

I've only had the '95 twice; the first time 1.5 yrs ago and it was showing beautifully at that moment. the next time presented as a vertical along with the '90, '93, '94, '95, '97, '99. I won't go into tasting notes(I'm too lazy too find them) but the '93 and the '95 had lost that youthful fruit. The '99, which I've tasted a few times seems to be a new style in which I'm not impressed but it's possible it's just the year I'm not impressed with. The others, I've only tasted that one time. The '90 was the biggest surprize as the fruit was so youthful If I would have been tasting blind, I would have thought this one to be the '97.

Thanks for the info; If I get the chance, I'll certainly try again.
