What do people think would go along with a typically cheesey spinach artichoke dip?

I'd favor a Chablis/unoaked Chardonnay but have a Sauvignon Blanc and Albarino on standby. Can see the cheese and artichokes stepping on the wine and fouling the best of intentions.

When all else fails: NV Champagne, e.g. Taittinger.

Gruner Veltliner or, as Hotwine suggests, sparkling wine.
