what do people like with a simple salmon dinner?

A Barbaresco would be my preference, but Pinot Noir is probably more widely accepted.

Ditto on the Pinot.

A full-bodied, slightly sweet Rose goes well also, e.g. the following:

2007 Rulo, Rosé, Walla Walla Valley, Washington, $15. A rosé of Syrah, this medium-bodied wine presents strawberry and sand plum aromas and flavors, backed by crisp acids and a long, lovely finish. This is a very good value, and it is a perfect summer wine to boot; 90/92.

2007 Beast (Buty), Malbec Rosé, Lefore Vineyard, Walla Walla Valley, Washington, $25. Light pink in color, the aromas are reminiscent of cotton candy and pomegranates. The strawberry and sand plum flavors are backed by crisp acids and a hint of sweetness; 90/90.
