What would make a good pairing with either of these dishes:
Pasta with a cheddar cheese sauce and chunks of tomato
House-cured salmon with shaved red onion, scallions and creamy farmer’s cheese

For the pasta with cheddar would go with something with a little pizzazz such as Sachetto, La Cortigiana, Merlot, Veneto. Would also consider a mid-range Chilian Cabernet Sauvignon or an Argentine Malbec.

For the salmon with farmers cheese would recommend one those so-called jammy pinots that Bucko and Foodie eschew such as the HRM Rex-Goliath, Free Range, Central Coast, Pinot Noir that we recently posted a TN on.
