- Catleen - 03-08-2002 Hi, I am serving strawberries marinated in a balsamic vinegar/sugar/lemon juice mixture, topped with a whipped, sweetened mascarpone cheese. I was thinking of serving champagne with it, but I was wondering if it would clash with the balsamic vinegar. Can someone offer some guidance? Our plans changed, and I didn't get to make the strawberry dish until this week. The lambrusco was so nice with this. Sweeter than I thought it would be.
