I'm looking for some wines to pair with a friend's basic Spanish meals. One is a rice and chicken dish with pimietos, and another is just pasta with a very plain tomato sauce.
Any help?

Spanish food...... try Spanish wines. Pay a visit to your nearest neighborhood wine store and ask the staff. There are some really good reds and whites produced in Spain.

Without trying to peg a particular wine for you, I'd probably lean toward a red rather than a white considering the food items you said were going to be served.

So many good spanish reds, many grenache based, that I'll just name a few. Lots of good rose's as well, which I really enjoy in hot weather. Etim, Las Rocas, Protocolo, Borsao Tres Picos, etc. Ask your wine store. If they don't have any good, low priced spanish wines...find a new wine store.
