Well, I got put on the spot the other day and now I am having to cook dinner for a friend. I am going to serve a Sauteed Chicken Breast with Tarragon Cream Sauce. I have no idea what kind of wine to serve with it. Please help.

A white Graves, or a Sem/Chard from Australia or Washington State. If you want to go red, a Cru Beaujolais such as Morgon would be fine. Depending on the date, a Nouveau Beaujolais would be fun.

If you got with the Nouveau Beaujolais, make sure it is a 2000. The nouveau is produced to be drunk VERY young and is over the hill about six to nine months after release. The 1999 was released last November. If there is any 1999 left in the stores, don't buy it.

The crus beaujolais IK suggested is very, very good!!
