D wants to make this for supper tonight. I'm thinking maybe a Chablis would work with it. Any thoughts? She says there'll be flecks of red pepper in the sauce.... Tks.

I would go with something like a CA CA land slightly oaked SB, but ideally it would be Toad Hallow Chard.
