What wine(s) would you suggest we provide to go with apple strudel following a dinner of German/Austrian food?

Hi Sedona, and welcome to the Wine Board. In your neighborhood would look for a muscat based dessert wine. Bonny Doon's Muscat d'Glasier is nice. It a perfect world with lots of money, would look for a late harvest riesling or gwurtztraminer from Alsace. It think a German Auslese would be a little too light for the strudel.
