Appetizer: Fresh buffala mozzarella balls, with drops of white truffle oil and shaved fresh white truffles, garnished with a few roasted red pepper slivers and basil. Wine big enough to stand up to truffles but not too oaky?

Any good quality, traditional (non barriqued) Nebbiolo (think Nebbiolo delle Langhe or maybe a Grumello or Inferno from the Valtellina) has spent it whole LIFE waiting for this moment, don't dissapoint them.......

Geez Botafogo, do you ever suggest anything non-Italian. I love Italian wines myself, but really...How about a good Saint-Emilion or Rioja, too name but a few?

I would also consider Spanna, Gattinara (more Italian) and, possibly, Priorato (Spain)--don't see much of these wines these days.

This intensely Piemontese menu bringing to mind a St Emilion or Rioja would be akin to perusing your Cd colletion for make out music and selecting Bad Brains or Green Day over Marvin Gaye or Johnny Mathis. I drink LOTS of non-italian wines (especially Champagnes and Argentinian Malbecs) but when the subject is food pairing for Piemontese specialties the answer is Nebbiolo or Ruche, not Merlot. Just the facts.

PS: when you could have a store (we don't but you could) offering ONLY the wines of Trentino Alto Adige and it would have more diverse styles, grape varietals, food friendliness, big scores AND value for money than most of the rest of the world combined, it's hard to overlook that fact.
