- ANXIOUS HOST - 12-12-2001 Hello and thank you for your help. I wish to find the right wines for a tasting menu including foie gras and caviar. duck consomme. roasted red mullet. deer fowl with a poivrade sauce. warm brie with a port wine caramel. Can you help me? I want to spend 45 to 65 dollars per person (canadian funds) on wine. - Innkeeper - 12-12-2001 Hi Anxious, and welcome to Wine Board. Your menu took me directly to the Rhone Valley. If you can find a 1999 Gigondas, go for it. That was one of their very best vintages. Failing that try a 1998 or '99 Cotes Du Rhone Villages. Get a bottle for every three guests unless you know they are heavy drinkers. In that case one for two. In all cases round up. - Drew - 12-12-2001 The menu sounds great and would add a Sauternes with the Foie Gras...BTW, what is a deer fowl? Drew - ANXIOUS HOST - 12-20-2001 I wish to thank you for your feedback, but I was wondering if you could suggest one wine per dish. Thank you - Innkeeper - 12-20-2001 Course #1: Sancerre rouge #2: Cotes du Rhone blanc #3: Gigondas #4: Banyuls |
