I'm serving a pork loin with wasabi mustard sauce with apple & potato gratin and I'm not sure what wine to serve. HELP!! Thanks to all.

Welcome to the board Carol. I hope we'll hear from you often.
Pinot Noir is usually a good match with pork but with the Japanese seasoning I would suggest Gewurztraminer or a dry Riesling.
