We've cut back on our wine consumption at dinner from a full bottle to only half a bottle, re-plugging the remnant half and sticking it in the fridge. Problem is, we don't always get back to it quickly and it fades after only a day or two. I've tried the usual means of preservation and am not impressed with results.
So - How to obtain half bottles of Bordeaux? Vendors in this area don't seem to carry them. Am interested only in St Julien wines, which we've found to be most consistent and dependable.

Can't help with the half bottles in your area, but have you tried Private Preserve to keep your wines alive a bit longer?

I love 375's, if only that I could try a few wines a night. You probably better than the rest of us to fine 375's but I've got agout about 150 of them, full range sweeties to rhones, to Bordeaux to Burgs to ports, etc,..
I find that the only way I can get 375 for Bordeaux is to buy them on futures adn I generally buy some cheaper ones too so that I can attack them sooner yet.

I've had very good storage results when I first open a .750 and slowly fill a .375 then recork it I think the .375 stores well for years with no apparant degredation of the wine. Have you tried this Gil?

KC - I've tried Private Preserve but don't care for the taste (yeah, yeah, I know, it's supposed to be tasteless, but it's not to me).
Drew - Haven't tried using empty 375s because I don't have any. Recall IK writing about that some time ago and sounds like a great idea. Will ask a local peddler to find some.
WW - By cutting back on vino, am able to save some brain cells for sacrifice to a splash (or three) of straight whisky before bed-time. We names our own poison.
