I love them too but the traditional Old Bay Spice treatment is a little too spicy for me. I would like your preparation better with very little or no cayenne pepper. I intended to get crab cake at Calvert House in College Park, MD area when I was there May 1st but on Sundays they don't serve the "light fare" which is one crab cake and I didn't want to order two. I got crab imperial instead and it wasn't that great. Probably should have gone with the crab cakes. Love soft-shelled crab sandwiches also.

How'd I miss this topic? I had two soft shell crabs last Sunday for my birthday celebration, paired with the '99 Bollinger La Grand Annee Champaigne, which was heavenly. Will get more at the beach this weekend. We saute in butter with a touch of evoo to prevent burning...also just a dusting of Old Bay and a squeeze of lemon.
