Hi there,
I'm currently in the process of assisting the opening of a new restaurant. I'm looking for ideas of wines to go with a ahi tuna appetizer which has soy sauce, wasabi, with shredded napa cabbage. and pair a wine with a Heirloom Tomato Salad which has feta cheese,basil, balsalmic and austrian pumpkin seed oil. I know my own preferences, but I'm looking for other ideas to use in my training meeting. Thanks for the help and ideas.

Not knowing the level of heat in the proportions for your ingredients, my suggestion is Riesling--of the semi-dry style, especially with balsamic...

For the tuna, you would have to tone down the heat and maybe you can get away with Pinot Noir--but again, this is the kind of food I woulod have to taste before I could give good guess.

you might try a good gewurtztraminer (Hogue, Fetzer) as well...

Hi H.A.A.R.W., and welcome to the Wine Board. I would go to one of the respectible retailers out there, and ask them to swallow their prejudices and sell you a very light Zinfandel from California.
